The rest, then the window
Fresh-roasted coffee needs a few days to de-gas before it brews evenly. After that comes the window: roughly two to six weeks where it’s at its best.
A roast date tells you where you are on that curve. A ‘best before’ a year out tells you nothing.

Storing what you don’t brew today
Keep the bag sealed, out of the light, and at room temperature. The fridge and freezer trade freshness for condensation. An airtight tin in a cupboard is plenty.
And buy what you’ll drink in a few weeks rather than stockpiling. Coffee isn’t a pantry staple; it’s a fresh one.
