Our flagship Sidra comes from a tight group of producers working steep, high-altitude plots in Colombia’s Huila department. The elevation slows the cherry’s maturation, concentrating sweetness and acidity.
What sets them apart is the care at the mill: slow, controlled fermentation that protects the delicate florals this varietal is prized for.
That’s a relationship, not a coincidence.
